Ingredients :

4 large bell peppers
2 tablespoons olive oil
2 tablespoons apple cider vinegar
Sea salt and ground black pepper, to taste
2 garlic cloves, crushed
2 tablespoons fresh parsley, chopped
2 tablespoons fresh scallions, chopped

Directions :

1. Toss all the ingredients in a mixing bowl.
2. Select the “Air Fry” function and adjust the temperature to 400 degrees F. Press the “Start” key.
3. Arrange the peppers on the air fryer oven perforated pan, making sure not to crowd them.
4. Air fry the peppers for 15 minutes or until they’re browned, shaking the pan once or twice during cooking.
5. Peel away the browned outer layer, if desired; cut the peppers into strips and add in the remaining
ingredients.
6. Toss to combine and serve well-chilled. Enjoy!
