Ingredients :

2 lb. scallops, cleaned and dried
Himalayan pink salt
Black pepper, ground
2 tbsp olive oil
1 tbsp garlic, minced
ΒΌ cup fresh orange juice
1 tsp orange zest
2 limes, juiced and zested
2 tsp thyme, chopped for garnish

Directions :

1. Season the clean and dried scallops with ground Himalayan pink salt and ground black pepper.
2. Over medium heat, add the prepared olive oil into a grill pan until hot.
3. Fry the minced garlic for 3 minutes until softened.
4. Gently place the scallops into the pan and cook for 4 minutes on each side, until lightly seared.
5. Place the grilled scallops onto a plate and cover. Set aside.
6. Add the fresh orange juice, orange zest, lime juice, and lime zest into the pan and stir scraping up the
bottom bits.
7. Drizzle the orange and lime sauce over the scallops and garnish with chopped thyme and serve.
