Serves: 6

Ingredients :

For biscuits:
6 tablespoons unsweetened soy milk or almond milk
1 cup all-purpose flour
½ tablespoon baking powder
1/8 teaspoon cayenne powder
½ tablespoon organic cane sugar
1 teaspoon garlic powder
¾ cup shredded vegan cheddar cheese
¼ cup vegan butter, frozen
1 tablespoon lemon juice
For garlic topping:
1 ½ tablespoons vegan butter, melted
½ teaspoon garlic powder
1 teaspoon dried parsley
For gravy:
1 tablespoon olive oil
¼ large onion, chopped
¾ cup unsweetened nondairy milk of your choice
¼ teaspoon pepper
1 vegan sausage, ground or finely diced
1 clove garlic, peeled, minced
½ teaspoon sea salt or to taste
1 tablespoon all-purpose flour
1/8 teaspoon chili powder
For garnishing:
2 tablespoons chopped fresh parsley or chives

Directions :

1. To make biscuits: Preheat the oven to 400° F. Place a sheet of parchment paper on a baking sheet.
2. To make buttermilk: Add lemon juice and milk into another bowl and set aside for a few minutes. The buttermilk will curdle.
3. Add flour, baking powder, cayenne pepper, sugar, and garlic powder into a bowl and stir.
4. Chop the frozen vegan butter into small pieces, and add it to the bowl of the flour mixture. Cut it into the mixture with a pastry cutter or with your hands until crumbly in texture. Add cheese and mix well.
5. Add the buttermilk, a little at a time and mix each time. You will have a moist dough.
6. Divide the mixture into 6 equal portions. Dust your hands with a little flour and shape the dough into balls. Place on a baking sheet lined with parchment paper. Leave a sufficient gap between the biscuits.
7. Place the rack in the center of the oven.
8. Place the baking sheet in the oven and set the timer for about 10-15- minutes or until puffed up and dry on top and light brown on the underside.
9. To make garlic topping: Add butter, garlic powder, and parsley into a bowl and stir.
10. Brush this mixture on the hot biscuits once it’s ready.
11. Meanwhile, make the gravy as follows: Pour oil into a skillet and let it heat over medium heat. When the oil is hot, add onion and sausages and cook until sausages are brown.
12. Stir in garlic and cook for a minute or so until you get a nice aroma.
13. Scatter flour over the sausage and mix until well incorporated.
14. Add milk, stirring simultaneously. Turn down the heat to low heat and simmer for 6-7 minutes.
15. Add seasonings and stir. Simmer for a few more minutes until thick in consistency.
16. To serve: Cut the biscuits into 2 halves if desired. Pour up gravy over the biscuits. Garnish with chives and serve.
